Delicious Yacon Waldorf salad

Yacon means ‘water root’ in the Inca language. Its sweet refreshing taste and crunchy texture is great in salads. Here’s a recipe for a special occasion.

Ingredients 

1 yacon, peeled and diced

3 crisp juicy apples, diced and not peeled

1 tablespoon lemon juice

1/2 cup lowfat mayonnaise 

3 tablespoons sour cream

2 ounces crumbled blue cheese 

1 cup diced celery

1 1/2 cups chopped radishes 

1/2 cup dried cranberries 

1 cup lightly toasted walnuts, coarsely chopped 

1/2 cup chopped flat leaf parsely

1 head radicchio or other suitable lettuce leaves for serving 

Instructions 

  1. Combine yacon and apples with lemon juice to prevent discoloration 
  2.  Stir in mayonnaise, sour cream and blue cheese
  3. Add celery, chopped radishes and cranberries
  4. refrigerate until ready to serve, adding nuts and parsley just before serving
  5. Sppon into 2 nested lettuce or radicchio leaves

Serves 6-8
