Here’s a basic, super easy and delicious suggestion to prepare the green beans which are abundant in the garden right now. They can be a meal in themselves, or make a tasty side dish with meat, fish and other veges. Served cold they could make a yummy antipasta. Gluten free. Thank you to Mathilde who inspired me to look up some recipes and get started experimenting in the kitchen. Scrumptious!
Ingredients: 250g fresh green beans, 10g butter, 1 tbsp olive oil, 1 small onion finely chopped, 2 cloves garlic crushed, 2-3 tomatoes diced (could also be canned tomatoes) , salt and pepper, dried/fresh oregano (optional), grated parmesan cheese on top (optional).
Instructions: wash and trim the beans cutting into desired length pieces, heat butter and oil in a saute pan or frypan and gently fry onions and garlic until soft, add chopped tomatoes and bring to the boil stirring well to combine, add the beans and season with salt, pepper and oregano. Stir well and leave simmering gently with the lid on the pan until the beans are soft ( this could take 30 mins or more). Check occasionally and give a little stir. When soft to your liking serve sprinkled with parmesan cheese.
