Ingredients:
6 artichokes, 1 cup panko breadcrumbs, 1 cup grated parmesan cheese, olive oil, salt, lemon, chopped parsley.
Method:
- Trim ends, peel and chop stems from artichokes. Save stems for adding to saucepan while cooking.
- Open artichokes up by smashing face down on the bench.
- Add salt to each layer of the artichoke.
- In a bowl mix breadcrumbs and parmesan.
- Stuff this mix into each layer of the artichoke. Top with parsley.
- Place artichokes snuggly into saucepan and pour olive oil over the top of each one.
- Add water to about 1/4 full as well as saved stems and cook (lid off) until you can remove a leaf easily (about 20-25 mins on medium heat). Keep topping up water as needed.
- Use the seasoned water to cook pasta and serve.
