Artichoke Recipe from Elisa Salerno

Ingredients: 

6 artichokes, 1 cup panko breadcrumbs, 1 cup grated parmesan cheese, olive oil, salt, lemon, chopped parsley. 

Method: 

  1. Trim ends, peel and chop stems from artichokes. Save stems for adding to saucepan while cooking.
  2. Open artichokes up by smashing face down on the bench.
  3. Add salt to each layer of the artichoke.
  4. In a bowl mix breadcrumbs and parmesan.
  5. Stuff this mix into each layer of the artichoke. Top with parsley.
  6. Place artichokes snuggly into saucepan and pour olive oil over the top of each one.
  7.  Add water to about 1/4 full as well as saved stems and cook (lid off) until you can remove a leaf easily (about 20-25 mins on medium heat). Keep topping up water as needed. 
  8. Use the seasoned water to cook pasta and serve.
